The Podkubovek family draws on a local winemaking history that dates back to the 12th century, when Carthusian monks planted Pinot Noir and Chardonnay in the region. Today, Sanctum continues that tradition through hand harvesting, native yeast fermentation, patient aging, and minimal intervention in the cellar. Two
